Title: Pasta-Crusted Salmon

Yield: 4 Servings

1cFinely minced fresh
  Linguine pasta (use as
  Many different flavors
  As possible)
4 (8 oz.) salmon filets,
  Trimmed of skin and bones
  Salt to taste
2tbOlive oil
  Oven-Roasted Vegetables
  Griddled Shallot Croutons

Preheat oven to 350 degrees.

Place minced pasta in a med ium bowl. Season filet with salt, then press one side of the filet in pasta mixture, coating that side heavily, and set aside. Heat oil in a heavy ovenproof saute pan over med ium heat. When hot, add filet s, pasta side down, and fry for 1 minute or until golden brown. Turn each filet over. Place pan in oven (pasta side up) and cook for 5 minutes or until fish is cooked.
